I love this chocolate sauce. It has a very intense dark chocolate flavor that comes from using real dark chocolate as an ingredient in addition to the cocoa powder. Of course I love using Sulpice Chocolat's gourmet dark chocolate bars as part of this recipe, but you can use any dark chocolate that you like; keeping in mind that using the highest quality you can find will make your chocolate sauce the best! Besides pairing perfectly with ice cream, this chocolate sauce makes an amazing addition to morning coffee and will make a mocha that will knock the socks off of any barista. After making it will keep for two weeks in an air tight container stored in the refrigerator.
- 1 cup water
- 1/2 cup light corn syrup (like Karo Syrup)
- 3/4 cup unsweetened cocoa powder
- 1/2 cup sugar
- 2 ounces semi-sweet chocolate, chopped
In a saucepan, whisk together the water and cocoa powder until smooth. Add sugar and corn syrup. Heat over medium-low heat making sure to dissolve all of the sugar crystals. Once sugar is melted, raise heat to medium. Once it begins to simmer, turn off heat and add the chopped chocolate. Stir until melted. It will thicken as it cools.
