During the holiday season people around the world enjoy both mint chocolate and chocolate mousse. This simple chocolate recipe lets you enjoy both at once. It will make you a huge hit at all of your holiday parties this year! The base for this recipe is courtesy of Gourmet magazine, but I have changed it up a bit to let you use your delicious Sulpice Chocolat Menthe, mint chocolate bar!
1 1/2 cups chilled heavy cream
2 bars Sulpice Chocolat Menthe, finely chopped (any dark chocolate bar will work just add a few additional drops of mint oil)
1/2 cup coarsely crushed peppermint hard candies (2 oz)
Pinch of salt
Heat 1/2 cup cream in a 1-quart saucepan over low heat until hot, then whisk in Sulpice Chocolat gourmet chocolate with a pinch of salt until smooth. Transfer to a bowl and cool to room temperature, stirring occasionally, about 30 minutes.
Beat remaining cup cream in another bowl using an electric mixer at medium speed until it just holds soft peaks. Add cooled chocolate mixture and beat until mousse just holds stiff peaks. Fold in 1/4 cup candy and spoon into 4 stemmed glasses, then sprinkle with remaining 1/4 cup candy. Chill until cold, about 1 hour.
