Amazing Chocolate Frosting
What makes this frosting so wonderful is that it is ganache based. The use of real chocolate in this recipe gives the frosting an amazing gloss and intense flavor. It pairs perfectly with our Decadent Chocolate Cake recipe.
- 1/3 cup cocoa
- 1/3 cup boiling water
- 1 1/2 cup (3 sticks) room temperature butter
- 1/4 teaspoon salt
- 1/2 cup powdered sugar
- 1 pound chocolate (use the best you can find)
Melt the chocolate in short bursts being careful not to burn it. Set aside and allow to cool. Whisk together the cocoa powder and boiling water until it forms a smooth paste and allow to cool slightly. In an electric mixer beat the butter, salt and sugar until pale and fluffy. Add the melted cooled chocolate* and the cooled cocoa mixture* to the butter and beat until smooth and creamy scraping the sides if necessary.
*The chocolate and cocoa mixture must be cooled to room temperature so that it doesn't melt the butter, but not so cold that it doesn't blend smoothly into the butter.
