Okay. So, do you ever have intense chocolate cravings but nothing in the house to snack on? Or are you trying to eat healthier, but still don't want to deny yourselves an indulgent chocolate snack? If either of these sound like you, and please know, they both sound like me, then you'll fall in love with this healthy sweet snack. Chocolate pudding can be super healthy and the recipe below is fast and easy since you cook it in the microwave.

1/2 cup white sugar (or your favorite sugar substitue such as Swerve)
1/3 cup unsweetened cocoa powder
3 tablespoons cornstarch
2 cups milk
2 teaspoons vanilla extract
- In a large, microwave safe bowl, whisk the sugar, cocoa, salt and cornstarch.
- Slowly, add the milk, whisking the entire time to prevent lumps.
- Put the mixture in the microwave and cook on high for 2.5 minutes. Stir. Return to the microwave and cook for another 3 minutes, stopping and stirring every 1 minute. The pudding should be smooth, thick and shiny. If it’s too liquidy, cook for an additional minute, but be careful not to overcook as the pudding can bubble up over the sides of the bowl.
- Stir in vanilla.
Place a piece of plastic wrap directly on the surface of the pudding to prevent a skin from forming, and chill in the refrigerator. Serve cold.
*option 1: omit the cocoa powder to make a vanilla pudding
